Fluffy Berry Pancakes

Happy Pancake Day to all you lovely human beans!

Pancake day is pretty spectacular, considering it is literally a day where we stuff our faces with these circular treats. Originally celebrated because of its religious connotations, Shrove Tuesday relates to the Christian festival of Lent.
What is Lent?
Beginning on Ash Wednesday (the day which directly follows pancake /Shrove Tuesday), Lent is a 40 day period of reflection and preparation before the celebrations of Easter. Lent is commonly a time when people choose to give up something such as their favourite food to mimic Jesus’ sacrifice while in the desert for 40 days.
So the day before this all kicks off we have turned into the day of PANCAKES, the day to do the exact opposite and inhale as much fluffy goodness as possible.
These pancakes are the fluffiest I have ever made. They are super easy to make and taste great!

INGREDIENTS: (Makes 4)
1 Cup Almond Milk
3/4 Cup Plain Flour
1/4 Cup Self-Raising Flour
1Tsp Baking Powder
1 Tsp Maca Powder (Optional)
3 Tsp Muscovado Sugar (Or any)
1/3 Cup Oats
1 Tsp Vanilla Extract
Pinch of Salt
Handful of berries (frozen or not)
Banana
Pecans
Berry Chia Compote:
Frozen Berries
Agave Syrup
Lemon Juice
Chia Seeds

METHOD:
Mix all of your batter ingredients into a bowl and mix with a fork to form the batter. (Lick spoon to taste because it is YUM!)
Heat some oil in a pan and after a few mins form 4 pancake shaped blobs.
Put the lid on and let these cook for a few mins on one side and then flip onto the other side.
Berry Chia Compote:
Heat your frozen berries in a pan on a medium to high heat. Add in the syrup, a squeeze of lemon juice, 1 tablespoon of chia seeds and a little water an simmer. Mash your berries with a potato masher or fork and cook on medium heat for a few mins.
