Ultimate Fry Up

INGREDIENTS:
Cherry Vine Tomatoes
Quorn Sausages
Avocado
Tofu
Mushrooms
Spinach
Extra Firm Tofu
Fresh Lime
1tsp Ground Corriander
1tsp Ground Cumin
1tsp round Turmeric
Honey

METHOD:
Sausages: Put on a tray in the oven for 15-20 mins, turning half way.
Tomatoes: Heat some oil in a pan and add the tomatoes (on the vine). Season with salt and pepper and simmer for 5-8mins.
Mushrooms and Spinach: Chop your mushrooms. Add some oil to a pan and after a few mins, add in the mushrooms. Crush a clove of fresh garlic over the mushrooms and after a few minutes add in your spinach. Season with salt, pepper and chilli flakes. Put a lid on the pan and simmer on a low heat for 5-8 mins.
Tofu Scramble: Ensure you have pressed your tofu to get rid of the excess water. For a more thorough guide on cooking tofu see here.
Add some oil to a pan and after a few mins add in your tofu blocks. Start to smash the tofu apart with your wooden spoon but be careful not to mash it too much as you’ll want some nice chunks in there.
Add in your spices and a drizzle of honey and cook on medium heat for 5-8mins. Season with salt and pepper (and fresh parsley if you have some… clearly I didn’t!)
Avocado: Slice or mash your avocado in any way you like, I prefer it in big chunks for a meal like this. Squeeze some fresh lime on top, along with some black pepper and chilli oil.
