Sausage and Pakora Bap

This is one of the best and easiest meals I have ever made. I have been suffering from a weeklong migraine so the thought of spending a while in the kitchen surrounded by food has not been the most appealing idea. However, I was super hungry and thought something warm, comforting and delicious might help soothe the head. (It did)

I always make sure my fridge is stocked with certain jars full of ready to eat, healthy and delicious antipasti type foods like grilles artichokes, peppers and sun-dried tomatoes. These little jars are extremely useful for moments like this when cooking seems like a lot of effort and they last a really long time. Plus they are only 99p a jar!

INGREDIENTS:

METHOD:

Put some oil in a pan on a medium heat. Chop up the sausages and put them in the pan for a few minutes.

After a few minutes, chop (or crumble) and your pakora balls, grilled artichokes, peppers and sun-dried tomatoes and add to the pan.

Add some salt and pepper and a drizzle of honey and cook on medium heat for 5-8 mins.

Toast your bap a little in a toaster or under a grill. Spread your pesto and chutney on the bread and load it up with all of the ingredients in the pan.

Top with the salad leaves, fresh coriander and some chilli oil. Sprinkle some black pepper and sea salt on top and enjoy!
