Jackfruit Tacos

INGREDIENTS:
The Jackfruit Filling:
1 Tin Organic Young Jackfruit
Red Onion
Red Bell Pepper
Fresh Garlic
Honey
Alternatively you home make your taco flavouring, using the following spices:
Cumin
Oregano
Smoked Paprika
Paprika
Honey
Garlic Powder
Onion Powder
Chilli Flakes
For the Guacamole:
2 Avocados
Bunch Fresh Coriander
Fresh Time
Black Pepper
Chilli Flakes
Salsa:

METHOD:
Put a tsp of oil in a pan (I use coconut but any will do). Add in thinly chopped red onions and cook for a few mins. Crush and add in three fresh garlic cloves.
Chop your red bell pepper into small pieces and add to the pan.
Open your tin of organic young jackfruit and drain. Then take each piece of jackfruit and start to pull at it so you are separating it into small, strip like pieces. Put your pulled apart jackfruit pieces into your pan. Make sure you break down the harder core so you aren’t left with hard pieces in your tacos. Throw out the small seeds in the centre of each jackfruit piece.

Add salt, pepper and garlic powder to the pan along with 1 tbsp of honey. Then add in your El Paso mix (or the listed ingredients) and mix in. Put a lid on your pan and cook on a medium heat for 8 mins.
Whilst your jackfruit is cooking, smash your avocados into a bowl and squeeze in the juice of half a lime. Add some fresh coriander and mash together with a fork. Sprinkle in some chilli flakes and black pepper. Guac – done!
In a separate, small pan put a little bit of oil (any, I use coconut) and add in your can of refried beans. Add 1 tsp honey, cover and cook on low-medium heat for 5 mins.
Once everything is cooked, load up your tacos, squeezing some fresh lime over them and sprinkle with a handful of fresh coriande. Serve and enjoy!
