INGREDIENTS:
Plum tomatoes
Mushrooms
Fresh Coriander
Zucchini
Red Pepper
Sweet Potato Pakora (Great Food)
Smoked Paprika
Honey
Garlic
Chilli Oil
Homemade Pesto
METHOD:
Put some oil in a pan on a medium heat. Chop the zucchini and red pepper and add to the pan. Crush two cloves of garlic and add to the pan. Cook for 5-10 mins.
Add in your chopped mushrooms, a handful of plum tomatoes and a bunch of chopped fresh coriander.
Crumble your pakora into the pan along with 2 teaspoons of smoked paprika and a drizzle of honey.
Cook with the lid on for 5 mins. Season with salt and pepper. Serve on granary toast with fresh coriander. Enjoy!
